What does “fast” mean…
Answer: When you say “fast” or “fast working egg”, you’re really talking about the texture or the shape of the egg.
One of the most common things I’ve heard people say is that the egg fast works if it’s not too light or the texture is slightly rubbery. This is only true for eggs from the same manufacturer or farm; eggs that have been stored for longer periods, or eggs that have been left out longer than about 12 hours.
The idea behind this is that if two eggs come from the same egg producer or farm, they have been treated differently. For some reason, eggs from the first factory farm you purchase from are more light-colored and more rubbery than eggs from the second factory farm. Some people think that’s a benefit because their hands get all sticky and it’s easier to handle one egg.
However, I’ve never seen anything to back this up when I’ve looked in my eggs’ packaging for a good long time.
One other thing. The texture of an egg is more or less evenly distributed, regardless of the egg’s color. The actual texture of a shell, however, is what makes or breaks a fast egg. The closer to perfectly round an egg is, the slower it moves. But, as you can see, the two eggs above have different texture.
How do I tell if eggs are fast or not?
Answer: The one piece of evidence that a fast egg is different from one that’s not is where the yolk is located.
There are usually two places where your yolk will be: its position inside the egg (where it’s “nestled” inside the egg, and where it forms a shell or shell shape when you pull the shell up) or where it exits the egg (where it gets out of the shell).
The only rule is that the yolk will be at least 1/4 inch outside the shell.

In that photo you can see what looks like three egg whites being pulled out of the egg. This tells me that the two first white eggs were fasted while the second was not.
