A teacher will look for a lot of reasons for beginners. Firstly, some teachers might look to see if the student is proficient in using their instrument, and then maybe they use a technique that they think will help them achieve their goal of getting proficient. This is certainly what happens with a lot of beginners, but I think we’ve all been there.
Then there may be a few more reasons, but the most important are the teaching methodology and philosophy.
In general, beginners usually have some idea of the general principles of music and of music theory. You need to take a very broad and far-reaching view of the relationship between your instrument and music so that you can teach them the principles that will help them get from the basics to a real sense of how it works, and what they can do with it.
I believe it does take a few days for beginners to realise it’s not so easy to learn to play ukuleles just by playing them (which is a shame!) but in general you have to start out by putting yourself in that situation, and I’m not saying you can make an instrument into just another instrument, I’m saying that if you start out from a very small beginning, you will find things are much easier once you get used to learning.
Some other things I’ve learnt.
Some teachers might try to cover all areas of the ukulele before they can explain a technique with a ukulele. The same with the piano. In my opinion, the piano is a more “pure” instrument, so you don’t have to worry about the piano having “practical” uses in addition to its classical uses.
I also noticed teachers sometimes go a bit too far; one teacher asked the students to learn how to use our instrument but to start playing with it. When you ask your beginner to play using it, why not have them start playing it with it?
But I can’t speak for everyone, because I also had the experience of being asked to learn how to play classical piano. I started my instrument learning with a ukulele, and it turned out very difficult. It was a great learning experience, but it does teach some very basic principles of how to play, and if you don’t know it as part of your learning process you won’t be able to play it until you’ve seen more of it to help you get into it.
